| 1. Sieve the wheat flour and chestnut flour together, with the baking powder. Add sugar and mix the whole. Add the flavour here if it is dry or powder (cinnamon, anise,…). | ![]() |
| 2. Add the eggs and the melted butter. Add the flavour now if it is liquid (lemon juice,…). | ![]() |
| 3. Mix the whole until obtaining a homogeneous paste. Add the flavour now if it is in paste (vanilla paste,…). | ![]() |
| 4. Press the dough between the palm of your hands to homogenise it : that consists in crushing the paste on the working plan to mix it without giving it body (elasticity). | ![]() |
| 5. Lower then the paste using rolling pin over two metal rules so as to roll out the dough with a constant thickness (approximately 1 cm). | ![]() |
| 6. Cut out in the undercrust the forms of your choice, and brush them of a mixture of egg, crème fraiche, salt and sugar. This last operation is optional. | ![]() |
| 7. Bake in hot oven (200°C - thermostat 7) during 8 to 9 minutes. | ![]() |
